Judging chocolate isn’t just about sampling a variety of yummy desserts and picking a favorite. It’s about carefully dissecting the flavor, crumb texture and consistency of each piece. It’s about scrutinizing the appeal, both to the eye and the tongue. Then all these factors have to be given a number on a scale which will eventually determine the best.
While judging chocolate can be meticulous work, that was the task myself and two other judges set out to do for the Melt in Your Mouth Chocolate Contest at the Palouse Empire Fair this year.
