Holiday cooking classes at Dahmen

Dahmen Barn in Uniontown Dec. 14, beginning at 6 p.m., will offer an adult workshop titled "Prime Rib and Holiday Appetizers," a hands-on session in the kitchen under the direction of executive chef Aaron Jollymore and Bill Jollymore from Jollymores - A Dining Experience in Lewiston.

Participants will learn what prime rib to buy and why, how to tie the rib, season it and cook it and serve it correctly. They will also learn how to prepare Palouse potatoes and roast butternut squash and a maple glaze. Also included is wine tasting and pairing wine with the prime rib plus buying budget-friendly wines. Saturday, Dec. 17, Christine Zeoli will teach how to make an assortment of Christmas cookies from 1 to 4 p.m. Assorted varieties may include pecan sandies, almond lace rolls, jam thumbprints, pecan bars, traditional shortbread, chocolate crinkles and raspberry linzer torte bars.

Zeoli is a resident artisan at the Dahmen Barn. She is the kitchen director for the Delta Zeta sorority at the University of Idaho. All baking ingredients will be provided. Participants should bring containers that seal tightly for taking their cookies home. Class fee is $45. Registrations are required by Dec. 14 and may be made online at the event’s calendar listing on the website. A child at least 6 years old may accompany an adult at no additional charge.

On Saturday, Dec. 10, from 10 a.m. to 1 p.m., Sarah Nagle will offer a cookie decorating experience for children of all ages on a drop-in basis. Kids will decorate Christmas tree sugar cookies with piped frosting and miniature M&Ms. Free samples of the dough scraps from the tree cookies may be sampled. A second project will be dipping an Oreo cookie on a stick into white chocolate, then applying sprinkles. A donation of $1 per cookie is requested. Santa will visit from 10 a.m. to 1 p.m. that day and the Holiday Open House the same weekend offers samples of seasonal specialty foods in an expanded gift shop. Visitors may sign up for a door prize given each day.
