Judy Stone grew up on the New Jersey coast and earned a degree in nursing from Mountainside Hospital School of Nursing in Montclair before heading west to study Health Care Administration at City College in Bellingham. She stayed in Bellingham and taught Medical Assisting at Whatcom Community College for 13 years. In 1993, she made the move to Palouse to join her partner who is a professor of sociology at WSU. She began studies in nutrition, but soon returned to nursing, and worked for local family practices before taking a position at the Whitman County Department of Public Health.
At the Health Department, she managed the communicable disease programs that included TB, STD’s and HIV. In 2010, she retired from 45 years of nursing, but continued to work with people living with HIV in Whitman County through the Palouse HIV Consortium, which she and another nurse created.
Looking for additional post-retirement projects, Judy joined the League of Women Voters of Pullman in 2014. In 2016, she took over coordinating the Observer Corps for the LWV. The league is a non-partisan organization that works to promote the democratic process. The Observer Corps is made up of LWV volunteers who attend meetings of public agencies and report to the LWV on topics addressed at the various meetings. Currently, 15 observers attend one to three City of Pullman or Whitman County meetings of 12 agencies per month. Judy notes that there is a lot of interest in expanding the corps to communities outside of Pullman, and she would welcome additional volunteers.
Pullman and Whitman County officials have expressed their gratitude for the interest of the Observer Corps which won a LWV of Washington State award for its work in 2017.
When not working in the community, Judy likes to keep up with her two children and three grandsons. The youngest just graduated from WSU. She also likes to make scratch, reed baskets and decorate gourds, wooden boxes and plaques. These are for sale at the Northwest Showcase in Moscow. She also enjoys crocheting, needlework and sewing, gardening and doing crossword puzzles.
Recipes
Cabbage Nut Salad
½ head of cabbage – ........finely chopped
4 green onions – sliced
1 package of Top ........Ramen noodles, any ........flavor
Smash into small ........pieces
2 Tbsp. toasted sun-........flower seeds
2 Tbsp. toasted ........sesame ........seeds
½ cup toasted, sliced ........almonds
Toss and then add dressing and toss again.
Dressing
1 Tbsp. sugar
½ cup sesame oil
2 Tbsp. vinegar
½ to 1 package of ........Ramen seasoning
Salt and pepper
Chicken with Quinoa in
Slow Cooker
2 Tbsp. butter
2 tsp. minced garlic
1 cup chicken broth
2 Tbsp. white wine
¾ tsp. black pepper
¾ tsp. salt
1/3 cup plus 1 Tbsp. ........quinoa, rinsed
½ medium onion, fine-........ly chopped
2 celery stalks, finely ........chopped
2 carrots, peeled and ........finely chopped
2 pounds skinless, ........boneless chicken .........(breasts or thighs)
Add all ingredients except for chicken to the slow cooker and mix well.
Place chicken on top.
Cover and cook on low for eight hours.
To serve: Put chicken into individual bowls. Mix the quinoa and vegetables well, then spoon into the bowls alongside the chicken.
Popovers
1 cup flour
½ tsp. salt
2 or 3 large eggs
1 cup milk
1 Tbsp. melted butter ........or bacon fat
Mix the flour and salt in a bowl.
Beat the eggs and add to the milk and butter/bacon fat.
Pour into the flour mixture and beat until smooth, about two minutes with electric mixer.
Pour into buttered muffin pans.
Bake at 400 degrees for 35 to 40 minutes, or at 375 for 45 to 50 minutes.
