Residents of Colfax and the surrounding area are invited to a series of cooking classes hosted by Kim Nguyen and featuring Vietnamese flavors. The classes will be held in buildings Nguyen owns, the former Hen House Chicks and Masonic Lodge.
Nguyen owns a restaurant in Rockport, Texas, the Faifoo Cafe, which features dishes from her native Vietnam with other flavors incorporated.
“I combine because I travel a lot,” she said.
The first class will be Thursday, Dec. 28, at the former Hen House Chick location, 122 S. Main, Colfax, at 1:30 p.m. Nguyen will teach how to cook Tom Yum soup using an electric pot.
“The soup is very easy,” she noted.
The next two days the classes will be at the Masonic Lodge utilizing the kitchen. How to make spring rolls will be at 2 p.m. Dec. 29, and how to make Vietnamese pizza will be the same time on Dec. 30.
Locally grown flour from Palouse Heritage will be used in the Vietnamese pizza. When she teaches people to cook, she likes to show them what they can use and where those things came from. Nguyen said the classes will include hands-on learning for making the items.
Some people have already signed up for the classes with more space available each day. The classes are free, but donations are accepted to help cover cost of ingredients.
Nguyen said this is just the first chapter and plans to host more cooking classes in the future. Her overall goal is to bring people to the community so they will shop and boost the economy. She added that these items are partly to test how people respond to the flavor so she can better determine what kind of classes to offer in the future. She has been busy preparing for the classes, cleaning buildings, prepping and setting up window displays and cooking areas.
