My Favorite Recipes: Meet Michelle Kinkade

Michelle Bruce Kinkade was raised in LaCrosse, and graduated from LaCrosse High School in 1992. She has lived on the Palouse her entire life. Michelle currently lives in Pullman and works at WSU's Office of Admissions. She highly regards her job and is excited to take part in welcoming new students to the Cougar family.

It is a natural job for Michelle, since she received her undergraduate and graduate degrees from Washington State University and is proud to be a third generation WSU Cougar. Her grandfather, John Krafczyk, and parents, Lynn and Sharon Bruce, are all Cougars, and the Kinkade family is pleased to see the fourth generation of Cougars begin.

Michelle's son, Kameron, is attending as a freshman. The family has been known to say they "bleed crimson" and "Once a Coug, always a Coug."

Michelle is the mother of three boys, Kameron, Konner and K.J. Kameron at WSU is studying pre-med and hoping to one day attend medical school. Konner is a senior at Pullman High School and just earned the Greater Northern League's offensive MVP. He also plays varsity basketball and baseball. K.J. is 11 and a 5th grader at Jefferson Elementary. He loves fishing and is also known to play football, basketball and Fortnite against his buddies after school.

In Michelle's spare time, she loves to spend time at the family cabin in Coeur d'Alene. A great deal of her time is spent cheering on her active boys at their sporting events. Michelle recently decided to take up her own sport and just completed her first sprint triathlon. She found that she really enjoys running and biking, but prefers a casual swim in the lake over swimming to race.

Michelle boasts that the Palouse region is among the finest of small-town living, with communities that genuinely care and take care of each other.

Among the things that she highly regards are the wonderful medical facilities and hospitals, that she has visited all too often with her three active boys.

Recipes

Buffalo Chicken Dip

My signature dip that everyone requests that I bring to all WSU tailgates and friend gatherings.

1 cooked rotisserie chicken

2 packages cream cheese

1 jar Frank's wing sauce (not the hot sauce)

2 cups Mozzarella cheese

Put all the meat of the rotisserie chicken in a Ziplock bag. Add the bottle of Frank's wing sauce and mix. Spread the cream cheese into the bottom of a 9×13 inch pan. Pour and spread the chicken and sauce mixture over the cream cheese. Sprinkle the mozzarella cheese over the chicken. Cover with aluminum foil and bake at 325 degrees F for approximately 30-40 minutes. Serve with or over tortilla chips and enjoy!
