My Favorite Recipes; Meet Judy Gehring

Judy Gehring grew up in Palouse and graduated with the class of 1964. Following high school, Judy attended Eastern Washington University where she met her husband, Edward.

Judy graduated from EWU in elementary education and her husband graduated in secondary education. After graduation they lived outside of Whitman County for many years and were thrilled to return to Palouse and the family home in 2002. The Gehrings are the proud parents of three children and celebrated their 50th anniversary in 2016.

Judy said it was simply delightful to have the opportunity to not only celebrate their 50th anniversary, but do so by holding a formal wedding and renewing their promises to each other. Judy said it was one of the most memorable days in her life and she cherishes the festivities, having her children there with them and taking part in the ceremony.

Judy has found herself busily volunteering in many different avenues since returning to her roots. One of the ways she has enjoyed serving in her community is through a club called Round Table which has been assisting students in furthering their education for more than 100 years. Its main goals are to raise money and award Gar/Pal students scholarships. Judy is the acting president of the Round Table Club and is pleased that the organization has been able to award several thousands of dollars in scholarships to many students over the years. In the past, they have also been able to raise money to support the band as well as the robotics team. The club is currently looking for new members who would find it gratifying to carry on the work of raising money and awarding it to deserving students in the community.

The Round Table Club has its annual event approaching. It is the biggest contributor to the scholarship fund and is an imperative part to the success of the club being able to return funds to local students. They will hold a craft and bake sale where visitors will have the opportunity to purchase slices of homemade pie. They will also have raffle tickets available for prizes such as a large gift basket filled with an assortment of gifts as well as a raffle for two separate gift cards, each valued at $100. All money that is raised goes directly back to the community through the scholarships that are awarded to local high school seniors. The more the club can raise, the larger the scholarships can be. The date for the craft and bake sale is Dec. 1, and it will be held at the Palouse Community Center. Recipe

Delicious Pumpkin Bread

5 large eggs

1-1/4 cups canola oil

1 can (15 oz.) solid-pack pumpkin

2 cups all-purpose flour

2 cups sugar

2 packages (3 oz. ea.) cook-and-serve vanilla pudding mix

1 tsp. baking soda

1 tsp. ground cinnamon

1/2 tsp. salt

In a large bowl, beat the eggs. Add oil and pumpkin; beat until smooth. Combine remaining ingredients; gradually beat into pumpkin mixture.

Pour batter into five greased 5-3/4x3x2-inch loaf pans. Bake at 325 degrees F for 50-55 minutes, or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Freeze option: Securely wrap and freeze cooled loaves in plastic and foil. To use, thaw at room temperature.

Baker's Note: Bread may also be baked in two greased 8x4x2-inch loaf pans for 75-80 minutes.

Nutrition Facts-one slice: 150 calories, 8g fat (1g saturated fat,) 27mg cholesterol, 96mg sodium, 20g carbohydrate (13g sugars, 1g fiber,) 2g protein.
